Dear Madeleine,

It was almost a year ago today that we arrived in Arles for our cooking class. We were welcomed into your lovely home with open arms by your family and immediately began an adventure that will stay in my heart and in my mind until I am old and gray(er). I sat down to a bowl of homemade soup tonight and started flipping through a cooking magazine and couldn't help but think about all the other people from all over the world that have had such an incredible opportunity to partake in your classes since we left. I am smiling thinking of them, back home wherever that might be, with wonderful memories stored up of their own. I am positive though, that none of those memories are as vivid, as fulfilling or as everlasting as mine are of our time with you. Thank you, in honor of the time we had, we will open one of the few bottles of wine I purchased at the vineyard we visited during the class. I have saved everyone of them for a very special occasion. We will toast you and your family and those that might be as fortunatre as I am.

Hi Madeleine and Erick,

What a wonderful time we had at your house! I was so excited about the new recipes that I invited friends over for Sunday dinner and have been cooking for two days! I'm doing the Lapin, the white chocolate mousse, carrots and the cheeses in the zucchini.

Our visit to Arles will be in our memories for many years to come. Thank you again for an absolutely wonderful cooking class and experience of French life. The invitation to visit with us is open any time.

I love receiving your missives! I think of you so often and my days spent in your home and classes with just you and Erick and myself and Irene. That trip still ranks as one of my most tranquil and lovely memories. I often prepare things learned from you and think of the experience as if it was yesterday. You even have a place on a wall in a collage of photos from the trip... it's one of you up on a ladder picking figs for lunch! You have one of your fabulous hats on with a laughing smile... such a story behind it. I do hope to return someday, but until then, please know that your letters bring great joy and I often print them out and read them to willing listeners just to hear the passion you have for your life in Provence,

abbaye Welcome to our Arles-based Provençal cooking school and Bed and Breakfast. We're now into our 11th year offering carefully crafted vacation getaways for food lovers. We've a couple new classes on the program (French Immersion for Food Lovers and Yoga in Provence), plus our favorites such as our Hiking and Feasting week and the ever popular Mini and Classic Gourmands. As we so enjoyed our collaborative efforts last year, we are again offering our highly successfulTeens' Week.

Provence is a land of warm-hearted people, delicious cuisine, and spectacular structures built over its 2500 year history as one of the major centers of trade on the Mediterranean. It is our home, and we love to share it.

Every year we begin anew with fresh ideas and deepening relationships with the local artisans to share with you, our guests. In sync with our allegiance to the SlowFood movement, we are working almost exclusively with organic produce, organic vineyards and organic supplyers of all sorts. Food is our life, and the best quality we are able to obtain means -- for us -- organic and locally cultivated.

arlesiennes young.jpgIn our culinary tours, we begin each week with a visit to the outdoor market of Arles, the largest in France with over 1300 merchants. There we choose our fresh ingredients for our first cooking classes. As the week progresses we visit local artisans such as the chocolate maker, or the potter, go wine-tasting at local wineries and learn from the men and women who have wine in their veins.

olive grove in the springtimeAs we drive and walk through Provence, we will pass through orchards of olive trees and fruit, vine-covered hill sides and plateaus, rows of vegetables that will show up at the market stalls in Arles every Wednesday and Saturday. You can see a preview of what will be in season during your visit on our gourmand's calendar to Provence.

We'll bring you to intimate lunches at the home of the bee-keeper, back of the store visits to the baker and pastry-maker, and on guided truffle tours. Through stories, history and daily cooking classes we will share the traditional foods of Provence, the warmth of sharing time over Mediterranean food and Rhone wines, the pleasures of the table. A sampling of our favorite recipes are here for you to enjoy at home.

poppies Surrounded by such bounty, the urge to share it comes naturally in this sun-drenched country. The many varieties of fish at the market come straight from the Mediterranean Sea just a half an hour away -- leading every market day to be fish day in our house. The olives are pressed nearby and give us smooth and fruity golden green oil to drizzle over vegetables, bread, pasta.. The wines in our "backyard" are amongst the most distinguished, Châteauneuf-du-Pape, Gigondas, Vacqueyras, Lirac, Tavel, and more. And to our great pleasure, the wineries are small and welcoming and the wine-makers eager to convey their passion and knowledge. Mushrooms grow in the the hills, tomatoes are sold ripe from the field July through October, and fresh cheese from goats and sheep raised and tended locally is ours for the asking.
